Menu Plan for the Week of 3/10



MONDAY
quick curried shrimp

TUESDAY
beer-braised beef (basically a beef stew)

WEDNESDAY
hamburgers

THURSDAY
white & green chili

FRIDAY
green chile chicken casserole

SATURDAY
leftovers

SUNDAY
beer-braised beef short ribs


What a little rut I'm in this week. 2 chile/chicken dishes and 2 beer+beef dishes. Oh well. What's good is good. Let's not mess with it.



I don't remember where I got this recipe. I didn't make it up. But I do cook it up. It's tasty. And takes hardly any time at all.

Quick Curried Shrimp

1 1/4 lb. extra large or large shrimp, peeled & deveined
1 1/2 tbsp. curry powder
1/8 tsp. cayenne
2 tbsp. oil
1 medium onion, chopped
1 can diced tomatoes with green pepper & onion
1 tbsp. fresh lemon juice
1/4 c. chopped cilantro
salt & pepper

Sprinkle shrimp with curry & cayenne. Heat oil and cook onion over medium heat, stirring until softened, about 4 minutes. Add shrimp and cook, stirring, for about 2 minutes. Add tomatoes and lemon juice. Simmer, stirring often, until shrimp is done, about 3 more minutes. Add cilantro and cook for 30 seconds, just to wilt it.

  1. I see that hamburgers made it on your list this week. I'm torn between hamburgers and chipped ham barbecue, I want to eat both.

  2. I have only ever had one good chipped ham BBQ. It involved hot sauce, chili sauce, and green chiles. MMMMMMMMMM

    I want to try that shrimp recipe. It sounds like it would be good with rice.

  4. I served my curry with some bulghur, just to be different. It was super tasty. MMMMM.

    And yes, I concur on the ham BBQ. So nasty. Yet I always eat it when it's an option.
