Menu Plan for the Week of 4/19


I did not menu plan last week, and ate spaghetti twice just to prove it! Yuck! Not that I don't like spaghetti...but I could do better.

This week is abnormally busy, even for us. The girls have their dance show on Sunday, so they have rehearsal a few nights this week. Add in baseball, softball, Tball, AWANA, and MOPS, plus homeschooling and keeping the house from looking a wreck, and you will see that I HAVE to plan this week. Otherwise, I'll be eating McDonald's. And no one wants that. Especially me.

hirino psito (I have no idea what it means, but it better be code for "tasty") pork roast

turkey breast in the crockpot

carrot & celery sticks
oranges

FRIDAY
homemade pizza

SATURDAY
a mystery crockpot day

  1. I want your cumin-lime dressing recipe! That sounds awesome. Also, how do you make your chicken taco meat? Just with seasoning?

    As for my idea for the crock pot, I would suggest a teriyaki chicken or pepper chicken, but it looks like you're eating a lot of white meat this week. How about some stew beef and tomatoes? We love this and serve it over rice. It is so easy...just dump in the stew beef and as many canned tomatoes as you wish...I love using my granny's fresh canned tomatoes, but I've run out and found that furmanos or whatever brand is on sale works just fine. You'll want 1-2 large cans of crushed tomatoes.

  2. You could also do a nice chuck roast and mix together a can of cream of mushroom soup, a package of lipton onion soup mix (dry) and 1 cup of water. Pour that on top of the roast and cook all day...this is so yummy! :)

    As for the chicken taco meat, I crockpot a bunch of chicken parts, or a whole chicken, whatever I have that was cheap. I shred it once cooked (bonus, now I have chicken broth), checking for bones. Put it back in with a ladle or 2 of the broth. Add cumin, chili powder, oregano, salt, pepper, maybe some adobo sauce, some salsa, whatever. I don't buy taco seasoning, but you could just use that.
